• How do I look after it?
Hand wash and dry after use. Avoid leaving it sitting wet, and keep it away from bones or frozen foods. When the edge needs a refresh, a dual-sided whetstone will have it sharp again in a few minutes.

• Will it rust?
AUS-10 has high corrosion resistance for a carbon steel. The Kurouchi finish adds another layer of protection. Just hand wash, dry it off, and you won't have any issues.
• Which knife should I start with?
Gyuto if you want an all-rounder. Nakiri if you cook a lot of vegetables. Petty for detail work. Can't decide? The Starter Kit comes with a knife, saya, and whetstone.
• Where is it made?
Forged from AUS-10 steel from Tokai, Japan. Three-layer San-Mai construction with a hard cutting core wrapped in two layers of protective stainless steel.
